Wholewheat Italian Avo Slices

 

When it comes to avocado toast, it can be super simple or a bit elaborate and creative. I was in the mood for a little Italian flavor profile and avocados at the same time. So this creation was born. The Italian white bean spread is creamy and the fresh basil and pine nuts really give it a unique flavor. It would also make a delicious hummus, I will make a similar version soon and share it. But for now, its a spread on toasted wholewheat pocketless pita bread topped with mixed tomatoes, fresh basil, avocado, pinenuts and a hint of salt, pepper and dried Italian seasoning. Yummy!!

 

 

This is a really easy recipe too. Sometimes, I only have a few minutes for lunch or breakfast before heading out the door. This recipe is great for breakfast or lunch. The bean protein will keep you full and the whole grains will give you energy.

Instructions
  1. Place all ingredients into food processor and blend well, scraping sides to incorporate.
  2. Toast pocketless pita. Spread Italian white bean spread evenly onto pita and top with sliced tomatoes and avocados. Sprinkle with pine nuts, chopped basil, sea salt, pepper and Italian seasoning.
