Sprouted Smashed Avo-Toast

 

Its Monday! Ha, as if you didn’t know. Like most Mondays, my day started really early and in trying to get as much done I left the house without breakfast. I really try not to do that since I think its a bad habit and I get so famished by lunch that I over eat. Well, today was that kind of a day. Its just bitter cold here in New York and I guess another snow storm is brewing and looks like will hit us on Wednesday. That’s March for you.  Anyway, back to the Smashed Avo Toast, its very healthy and this recipe makes about four slices and serves two. But, I made three and I ate all three. It was breakfast and lunch though. 🙂

 

The little bit of lime juicy mixed with the avocado, really compliments and gives the avocado and extra layer of flavor. You can add just about any vegetable onto these avo toasts. I added, cucumbers, tomatoes, Daikon radish slices and a pinch of alfalfa sprouts. A sprinkle of salt and pepper and that’s it. I just had enough time to make this, photograph and post this before my next appointment. Gotta go!

Sprouted Smashed Avo-Toast

Instructions
  1. Smash avocado in a bowl with fork and mix in lime juice and salt and pepper
  2. Lightly toast sprouted bread slices and spread the smashed avocado spread evenly. Top with cucumber, radish, tomato slices and alfalfa sprouts. Sprinkle with salt and pepper, if desired.
