What is Tartare? Most people are not familiar with tartare or confuse it tartar sauce. And, that is is ok, I wasn’t familiar with this raw meat dish either. It is a French dish consisting of raw beef or fish. Supposed to be fancy shmancy but honestly, not for me. However, about a year ago, I was out to brunch at a local French inspired restaurant and I saw a beet tartare on their menu. It was topped with puffed quinoa and it sounded interesting and delicious at the same time. I confirmed with the chef that it was completely meat free and I ordered it. It was yummy, refreshing and light. I enjoyed it and I wanted to create my own version and this is what I came up with. Even placed it in a heart shaped mold just in time for a lovely Valentine’s Day appetizer.
