Red Beet Tartare for Two

 

What is Tartare? Most people are not familiar with tartare or confuse it tartar sauce. And, that is is ok, I wasn’t familiar with this raw meat dish either. It is a French dish consisting of raw beef or fish. Supposed to be fancy shmancy but honestly, not for me. However, about a year ago, I was out to brunch at a local French inspired restaurant and I saw a beet tartare on their menu. It was topped with puffed quinoa and it sounded interesting and delicious at the same time. I confirmed with the chef that it was completely meat free and I ordered it. It was yummy, refreshing and light. I enjoyed it and I wanted to create my own version and this is what I came up with. Even placed it in a heart shaped mold just in time for a lovely Valentine’s Day appetizer.

Beet Tartare for Two
Instructions
Beet Mixture
  1. Add all ingredients in a large bowl and set aside.
Dressing
  1. Mix all ingredients and add to the beet mixture. Blend well. Place in round or other shape cookie cutter. Pack it down and carefully remove the cookie cutter. Optional - garnish with reconstituted mustard seeds, red peppercorns and fresh dill springs and drizzle with balsamic glaze and extra virgin olive oil.
  2. Serve with your favorite toasted bread or crackers. I served it with lightly charred sourdough slices but I think any toasted bread will be great.
