Quinoa Power Bowl with Siracha Chick Peas

 

Hearty and satisfying is how I would describe this Quinoa Power Bowl. It boasts of a mix of complimentary flavors. You get a subtle natural sweetness from the sweet potatoes and a hint of spice from the siracha chick peas. A fresh crunch from the cucumbers and creamy, citrus flavor from the dressing that brings it all together. Really easy and enjoyable bowl for lunch or dinner. This recipe serves two, with a generous size bowl. I ended up saving a small portion and it was just as delicious the next day. It will hold up overnight so its good recipe to make the night before for an easy and nutritious work lunch.

Quinoa
  1. Cook quinoa according to package directions.
Roasted Sweet Potatoes and Siracha Chickpeas
  1. Pre-heat oven to 425 degrees.
  2. Place sweet potatoes on a pan and drizzle with olive oil. Place in oven and bake for 15 minutes, stirring the potatoes occasionally to bake evenly.
  3. Mix all siracha chic pea ingredients and place on a pan and back with sweet potatoes for 15 minutes. Stir occasionally to bake evenly.
Avocado Lime Dressing
  1. Place all avocado dressing ingredients into a power blender and blend well..
Assemble the Bowl
  1. Place all ingredients in a bowl, dress with dressing and enjoy!
