I look forward to Sundays and Sunday brunch every week. I try to keep my Sundays free from appointments and work but that does not always happen. There is just something about lazy Sundays, sleeping in and just relaxing before the crazy work week begins. Today was no exception and we made these delicious mandarin waffles with a hint of cardamom that gives these waffles a bit of an exotic flavor. I used mandarin zest to flavor the batter, I feel that citrus zest adds so much flavor to a recipe that you will notice me using zest quite often. As for cardamom, well there is no other flavor like it. But you have to be careful, a little goes a long way with this exotic spice. I have ruined recipes because I used too much cardamom, it can be that strong and over powering.
These waffles came out perfect. The outside had a beautiful crunch and the inside was moist and chewy just as a waffle should be. It may have been due to the the whipped aquafaba that made the difference. Aquafaba is the leftover juice from a can of chickpeas. It whips up just like egg whites and is a fabulous vegan substitute. I topped the waffles with fresh mandarin slices, blueberries, SoDelicious coconut topping and maple syrup. I even topped the waffles with a bit more mandarin zest to enhance each bite. I am super happy with the way these came out, the texture was perfect. Next time I will use the same base batter but create another unique flavor.
