Cooking Grains
  1. Cook 1 cup of brown rice and 1 cup of bulgur wheat according to package directions
Toppings
  1. Pre-heat oven to 425 degrees. Peel and cube beets. Spread the beets onto a sheet pan and coat with olive oil, sprinkle lightly with salt and pepper. Bake for approximately 25 minutes or until the largest beet is tender, mixing occasionally. Cook or heat edamame according to package directions. Slice mandarins, clementines or oranges. Shell pistachios, if needed.
Flavor Grains
  1. Once grains are fully cooked, place is a large bowl and mix with zest, vegan butter salt and pepper.

  1. Place flavored whole grains into a bowl and add toppings. Squeeze the fresh citrus juice into the bowl, add additional salt and pepper if desired. Mix and Enjoy!
