Heart Healthy Buddha Bowl

 

Some of my recipes that I share with you are an inspiration from a meal I had at restaurants. There was a time period when we used to eat out quite a bit and I had some of the most amazing vegetarian meals. But now that I shifted from vegetarian to vegan and started this blog, I mostly cook at home. A few years ago one of my favorite restaurants, made this roasted portabello mushroom steak over a mixture of beet and winterberries with roasted Brussell sprouts and crunchy pistachios. It was a hearty meal and they had it on their menu in the winter months. Once the weather warmed up, they took it off their menu. The beet and winterberry was a side and it had a well combined and complimentary orange citrus flavor. I though the flavor combination can be incorporated in a bowl and work well, and it did.

 

 

This bowl consists of nutritious whole grains, beets, edamame, citrus and pistachios. All super healthy ingredients that contain a lot of natural heart healthy nutrients. Healthy, Delicious and Filling!

Cooking Grains
  1. Cook 1 cup of brown rice and 1 cup of bulgur wheat according to package directions
Toppings
  1. Pre-heat oven to 425 degrees. Peel and cube beets. Spread the beets onto a sheet pan and coat with olive oil, sprinkle lightly with salt and pepper. Bake for approximately 25 minutes or until the largest beet is tender, mixing occasionally. Cook or heat edamame according to package directions. Slice mandarins, clementines or oranges. Shell pistachios, if needed.
Flavor Grains
  1. Once grains are fully cooked, place is a large bowl and mix with zest, vegan butter salt and pepper.
Assemble Heart Healthy Buddha Bowl
  1. Place flavored whole grains into a bowl and add toppings. Squeeze the fresh citrus juice into the bowl, add additional salt and pepper if desired. Mix and Enjoy!
