Prep Ingredients
  1. Drain jackfruit, squeeze all the water out of the jackfruit and finely chop. Finely chop carrots and celery.
Mix Jackfuit Salad
  1. Mix all ingredients in a large bowl, cover and refrigerate for about two hours. This is not necessary but it will allow time for all the flavors to fuse.
  2. Lightly toast pita bread, top with baby spinach and jackfruit salad.
