Blistered Shishito Pepper Hummus

 

Oh my, if you ever had blistered shishito peppers and loved them, then I suggest you try this Blistered Shishito Pepper Hummus. I have noticed these peppers popping up on restaurant menus as an appetizer or vegetable side and that tells me these are becoming kinda trendy. Trader Joe’s seems to always have them and that’s where I get mine, but I’m sure most grocery stores have them as well. If you are not familiar with Shishito Peppers, they are a Japanese varietal now grown in the United States in midsummer through fall. They are slender and finger shaped, sweet flavored pepper. However, be warned that it is estimated that one out ten peppers are actually hot. You won’t know until you bite into one. They are super easy to prepare, just heat a cast iron pan, coat the peppers in light olive oil and sautee until they blister and get a char on them. Sprinkle with sea salt and lemon zest. Yummy!!!

Hummus
  1. Place all ingredients in a food processor and process until smooth and creamy. Scrape sides if needed.
Shishito Peppers
  1. Heat a cast iron pan. Toss peppers in olive oil and sprinkle with salt and pepper. Place peppers in a hot pan and rotate until peppers blister. Remove and chop.
  2. Toast and slice Naan bread. Place hummus in a bowl and top with chopped shishito peppers, toasted sesame seeds and lemon zest.
