Jack fruit is a must have ingredient in vegan cooking. I have discovered it a few years ago as it wasn’t readily available. Just recently Trader Joe’s started carrying it in a can, so every trip I stock up. I like to get the plain, unflavored fruit since it gives me the option to add my seasonings and create my own flavor. I like to use them in tacos, chili, salad, quesadillas and I even made a pot-pie. I will post the pot-pie recipe when I get a chance to make it again.
Right now, lets get to these adorable taco bowls. The taco bowls are by Old Elpaso and they are just waiting to be filled with just about anything. I layered my toppings starting with the BBQ jack fruit on the bottom. This is a very easy recipe and its a perfect hand held appetizer if you are hosting an event with a crowd, like Superbowl. There is minimal cook time and mostly consists of prepping the ingredients. Once assembled place them on a platter and they will be gone in matter of minutes. This recipe makes ten tacos, but you can easily double or triple it.
