I really enjoy baking, more so than cooking. But I especially enjoy baking for others as well as my three little fur babies Cody, Jacko and Buddy. We have been through a lot over the past ten years and now that they are getting older, I make sure that we have special times together and that includes indulging on some homemade gourmet treats.
As a special Halloween treat, I made these pumpkin-coconut cookie bites that are healthy, chewy and easy to make. They were a big hit with Cody and Jacko, not so much with Buddy. I should have known, Buddy does not eat anything orange, no pumpkin, no carrots, no squash and no sweet potatoes. (unless its chopped into small pieces and mixed with other food).

Pumpkin-Coconut Doggie Cookies
1 cups whole wheat flour
2 tablespoons unsweetened coconut flakes
½ teaspoon baking soda
½ teaspoon cinnamon powder
½ cup pumpkin puree
1/3 cup unrefined coconut oil, melted
¼ cup almond milk
2 tablespoons 100% pure maple syrup
Pre heat oven to 350 degrees. Line a cookie sheet with parchment paper.
In separate bowls, sift all dry ingredients and mix all wet ingredients. Combine dry and wet mixtures and mix well.
Form 1 teaspoon size balls and place on cookie sheet. Flatten with cookie balls with potato masher and bake for 15-20 minutes, or until toothpick comes out clean.
