Apple Pie Oatmeal Breakfast


Simple, fast, warm and delicious would describe this apple pie oatmeal breakfast. It has all the flavors of a warm apple pie fresh out of the oven but it is also a heart healthy, filling and nutritious breakfast that is not overly sweet. It can also be pre-made and warmed up in the microwave at time.

Apple Pie Oatmeal Breakfast

Ingredients (serves two)

Cinnamon Apple Topping:

1 medium apple thinly sliced
1 tablespoon sugar
1 tablespoon vegan butter
1/8 teaspoon cinnamon powder
Chopped Pecans (additional topping)

Directions:

On medium/high heat, melt butter in a small sauce pan and add the sugar and apples. Continue cooking the apples for about 3-4 minutes, or until they are soft on the outside but a little crunch on the inside. Remove from heat and add the cinnamon powder

Oatmeal:

1 Cup Rolled Oats
1 Cup Almond Milk (other non-dairy milk is ok)
1 Cup Apple Cider

Directions:

In a medium saucepan bring milk and apple cider to a boil and add oats. Reduce heat and simmer for about two minutes or until the mixture has thickened and resemble oat meal.

Top with cinnamon apples and chopped pecans.
